Ingredients
Crimini or Button Mushrooms, 1 Pound
Salt & Pepper, to taste
Lup Cheong Sausage, 3 Ounces
Kim Chee Shrimp Poke, 1/4 Pound
Sriracha Mayo, 1/2 Cup
Yellow Onion, 1/4 Medium Onion
Directions

Ingredients

  • 1 pound crimini or button mushrooms (as large as possible)
  • Salt & pepper, to taste
  • 3 ounces lup cheong sausage
  • 1/4 pound kim chee shrimp poke
  • 1/2 cup sriracha mayo
  • 1/4 medium yellow onion

 

Directions

  1. Preheat oven to 350F.
  2. Remove stems from mushrooms and bake bottom up for 15 minutes. This will render water content to ensure filling consistency. Drain and season with salt and pepper, and let cool.
  3. Small dice lup cheong and saute. Let cool.
  4. Mince Kim Chee Shrimp and small dice onions.
  5. In a bowl, combine kim chee shrimp, onions, lup cheong, and sriracha mayo, and mix thoroughly. Add salt and pepper to taste.
  6. Fill the mushrooms with filling and bake for another 10 minutes.
  7. Broil for 4 minutes and serve.
